These easy flourless vegan blueberry cookies are soft, chewy, light, and made with just 5 ingredients! Made with naturally sweetened & healthy options.

My family and I always love snacks, and cookies are our regular. They're soft, delicious, and easy to make.

Blueberry Cookies

Ingredients
As mentioned earlier this recipe only has 5 ingredients. Most of these ingredients you already have in your pantry.

2 cups rolled oats,
2 large bananas, mashed
1/2 cup peanut butter
1/4 cup blueberries, chopped
1 Tablespoon honey ( optional)
Directions
Preheat to 350°F and line a baking sheet with a cookie sheet or parchment paper. If you have neither grease your baking pan with oil.
In a large bowl, combine all ingredients: Peanut butter, oats, honey, and mashed bananas. Then fold in the blueberries.
Fold cookie balls using an ice cream scoop and place them on the lined tray. Press each ball and shape it into a cookie, or roll it in hand and shape it into the desired form.
Bake the blueberry cookies for 10-12 minutes, or until golden on the edges.
Remove the cookies from the oven and allow them to cool on the tray for 10 to 12 minutes.
*We stored our cookies in a sealed container for up to 3 days in the refrigerator.
