Peanut Butter & Pretzel Popcorn

We made this timeless mouth-watering snack as a last-minute dish for our meal preparation, and now it has become a household snack ritual.

We started this method of making popcorn as a way to budget. It started by making regular stovetop popcorn to testing other divine kitchen toppings. This recipe prevents kernels from burning, running to the store late at night for that sweet & salty snack, and will become a family fave.


Perfect Peanut Butter Popcorn Clusters


Recipe:


Note: Make sure the inside of the pot is completely dry before heating the oil in it, or else the oil will sputter.


  • 1/2 cup (1 stick) unsalted butter, or 3 tablespoons coconut oil or extra virgin olive oil

  • 1 1/2 cup of honey oats cluster

  • 1 1/2 cup warm creamy peanut butter

  • 1/3 cup raw honey

  • 1/3 popcorn kernels

  • A hand full of pretzels

  • cupcake holders

  • cupcake or muffin pan

  • salt to taste

Method


  1. Heat the oil

Heat the oil in middle, or large saucepan. Allow the butter or coconut oil to heat.


2. Adding the popcorn


Add the 1/3 cup of popcorn kernels in an even layer, then cover. Once, you hear the popcorn starting to pop, shake the pot side to side on the burner, then remove it once the popcorn touches the lid.


Tip: Keep your burner on a middle heat and try to keep the lid slightly open to let some steam release.


3. Grab a large bowl


  • Place cooked popcorn in a large bowl.

  • Add pretzels and oats

  • Warm peanut butter and honey together in the microwave for 20 seconds, then add to the bowl, leave a little for a topper.

  • Mix into evenly coated.

  • Place cupcake holders in the pan, then add your popcorn cluster mix

  • Now add the remaining peanut butter and honey mixture.

  • Then, sprinkle with salt

  • Let it sit overnight and enjoy!

Note: You can add oats and pretzel on top as well, for extra crunch.
