Coconut Mashed Sweet Potatoes


Ingredients


Prep Time: 5 minutes| Cook Time: 15 minutes| Total Time: 20 minutes

  • 3 sweet potatoes

  • 1 Tablespoon of coconut oil

  • ¼ cup Almond milk

  • ¼ cup chopped Coconut

  • ¼ teaspoon Sea Salt

  • ¼ teaspoon ground Cinnamon

  • pinch ground Nutmeg

  • ¼ teaspoon ground Ginger

Directions


  1. Rinse the sweet potatoes, first.

  2. Put the sweet potatoes in a medium pot and add just enough cool water to cover them. Bring to a boil and cook until fork-tender, about 15 minutes.

  3. Drain and return the potatoes to the pot on the stove top with the burner turned off.

  4. ADD the remaining ingredients, and mash until smooth and well-combined. Serve Immediately. * You can add less milk if you want.
