EASY GROUND TURKEY CHILI ENCHILADAS

These Easy Ground Turkey Enchiladas make the best dinner. They're stuffed with cheese, ground turkey, and enchilada sauce. Then topped with Enchilada garnish and baked for 15 minutes.

This homemade dish was perfect for a movie night with the family. If I had to pick one recipe that is easy, tasty, and hugs the belly, it would have to be enchiladas.

Look! I know it's a bold statement, but you have to give it a try. These easy ground turkey chili enchiladas feature corn tortillas stuffed with cheese, and chili mix topped with queso sauce. They're baked in an air-fryer or oven until the cheese is finger-licking melted, golden, and bubbly.


EASY GROUND TURKEY CHILI ENCHILADAS


Ingredients

  • 1 ½ cup Ground Turkey

  • 1 pack of taco seasoning

  • 8 corn tortillas

  • 2 ½ cups shredded Mexican blend cheese

  • salt and pepper, to taste

  • 1 10-ounce Rotel original Dice tomatoes and chiles

  • 1 8-ounce can of Kidney Beans

  • 1 8 ounces of Tomato sauce

  • Optional topping: diced onions, shredded lettuce, Pico, chopped cilantro, queso cheese

Directions

  1. Preheat oven or Air-fryer to 400°F, air-fryer turn to 400°F bake for 5 minutes to warm up the baking pan.

  2. Cook ground turkey until done; then add taco seasoning.

  3. Now add dice tomatoes and kidney beans cooked for 5 minutes.

  4. Warm up the tortillas in a microwave for 1 minute.

  5. Assemble the enchiladas by filling each tortilla evenly with the ground turkey meat sauce and a generous pinch of shredded cheese. Roll them tightly to close and place them in a large baking dish or air-fryer pan, with seam side down.

  6. Pour the remaining ground turkey meat sauce over the tortillas and then top them with the remaining cheese.

  7. Bake in Oven for 20 minutes or Bake in the Air fryer for 15 minutes.
