Veggie Garlic Hummus Tacos


I can say that it felt fitting to post a taco recipe because It's tacos and who doesn't love a quick throw-together dinner? And even better, these Veggie Garlic Hummus Tacos are healthy, filling, and can be made whenever.

Ingredients

  • 1 bag 12 oz broccoli

  • 15.25 oz sweet corn, whole kernel corn

  • 1 cup fresh carrots, julienne

  • 1 green bell pepper, julienne

  • 1 small red onion, julienne

  • 4 Garlic Cloves, julienne

  • 4 cups fresh spinach, rinsed.

  • ¼ tsp garlic seasoning

  • 1 tsp pepper

  • pinch of sea salt

  • ¼ tsp fresh or dried basil, minced (Optional)

  • Salsa (Optional)

  • Garlic Hummus

  • 2 tablespoons olive oil



Directions

  1. Heat olive oil in a sauté pan over medium heat.

  2. Add onion, pepper, garlic and let them sauté 2-3 minutes.

  3. Next, add broccoli and corn sauté for an additional 4 minutes.

  4. When veggies are cooked through but still crispy add garlic seasoning, pepper, sea salt, and basil.

  5. Warm up your tacos in a sauté pan. They should have a golden bottom.

  6. To serve tacos, smear hummus onto each tortilla. Top with spinach and carrots. Top with sauté veggies. Top with salsa, cilantro, and lime.
